Ingredients

  • 2 large sweet potatoes, peeled and diced
  • Avocado oil spray
  • 1 lb lean ground beef or turkey
  • 16 oz 2% cottage cheese
  • 1 large avocado, sliced
  • 2 tbsp taco seasoning
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • Salt to taste
  • 1 tbsp hot honey (optional)
  • Crushed red pepper, to taste
  • Optional: Fresh cilantro, red onion, lime juice, pico de gallo

Instructions

  1. Air Fry Sweet Potatoes : Toss diced sweet potatoes in avocado oil spray, paprika, garlic powder, chili powder, and salt. Air fry at 400°F for 18 minutes, shaking halfway.
  2. Cook the Meat : In a skillet over medium-high heat, brown the ground beef or turkey with taco seasoning. Cook until no longer pink, about 8–10 minutes. Drain excess fat if needed.
  3. Assemble the Bowl : In each serving bowl, layer sweet potatoes, seasoned meat, a generous scoop of cottage cheese, avocado slices, and your choice of toppings.
  4. Garnish and Serve : Drizzle with hot honey (optional), sprinkle crushed red pepper, and finish with fresh herbs or lime juice.
